Core classes can be created in every campaign, assassins and ritualists can only be created in factions, dervishes and paragons can only be created in nightfall.
If you mean you don't see the icon in the create character screen, it's because no characters can be created in EotN. It does come with EotN, so you'll be able to access it at level 10+.

Rits, sins, dervs and paras are Campaign Specific. That means you can only CREATE a Rt or sin in factions. They can still play in any campaign as always but must start out in cantha.

Those only come from Factions, you do not get them in Nightfall just like you dont get dervishes and paragons in Factions. They are chapter specific. You have to start in Factions to get the assassin and ritualists profession as a choice, but if you start in Nightfall for the paragon or dervish profession you won't get in ritualist or assassin.

Everything is normal.
You can only create Assassins and Ritualists in Cantha (Factions campaign) although they can be brought to Nightfall and Tyrian territory as you progress them.
You may also only make Dervishes and Paragons in Nightfall who can also travel to Tyrian and Canthan areas once you level up.
The Eye of the North box cover probably isn't there because it's an expansion rather than a standalone campaign. (Edit: You can't create characters in EotN which is why you don't see it in Character Select.)

The 6 core professions can be played in any game, but the Assassin and Ritualist can only be played in Factions (or only start in Factions but can be moved over to either other campaign), while the Paragon and Dervish can only be started in Nightfall.
So your options for Nightfall should only be: Warrior, Monk, Necromancer, Mesmer, Elementalist, Ranger, Paragon, Dervish.
As for EotN not showing up...I'm not sure it may just not show up I never really payed attention to it.

IMO Prophecies is the best starting-out point if you haven't tried GW at all before.
In Prophecies, you get skill quests, which help a lot since you don't have much cash on hand. Factions and NF both require you to buy skills past the few you get at the start. Also, the pace of Prophecies is quite slow: in Factions and NF, you're pretty much supposed to be level 20 once you leave the starter island. Prophecies is a bit more forgiving when you're trying to learn, in that sense. Max armor isn't available until much later in Prophecies, but you can always hop over to Kaineng City to buy said armor once you hit Lion's Arch. You can also hop over to Kamadan from there for heroes, which are only available in NF or Eye of the North.
Also: Prophecies Pre-searing <3. Nightfall actually has some pretty breathtaking pictures if you stop to look too.

Yeah each campaign you can make certain proffesions. Factions comes with ritualist and assasin. Nightfall comes with dervish and paragon. All 3 campaigns with prophicies come with the core classes like the warrior and monk. In the prophicies it is impossible to make a derv,sin,para,or rit there. But u can complete a quest to get ferryd to one camapign map to another. You can get ure dervish to do the nightfall campaign and the other 2 campaigns. Nothing has happened to ure account so ure fine and WELCOME TO GUILD WARS.

I'd put my vote behind Prophecies too. However, if you plan to play 'solo' with Henchmen a lot, you might want to consider starting in Nightfall so you can get some Heroes to help you. (Heroes are customizable henchmen). There is also a lot of nice scenery in Nightfall - some of the waterfall effects are very nice.

That's the one that I refuse to buy and I do not have skills as a result. So start there
